About Us
Transatlantic Foods, Inc. is a New York-based company specializing in fresh, frozen, dried and processed wild and exotic mushrooms, as well as select specialty food products. It was founded by two “old hands” in the business, with a combined experience of over 40 years in the Fancy Food Trade:
Thierry Farges is an entrepreneur, pioneer, and expert in the field of wild and exotic mushrooms and truffles. He founded Aux Délices des Bois in Tribeca in the 1980’s. It was a distributor and mail order source for mushrooms and truffles. As a consultant, he developed and managed the mushroom division of a well known New York area company for seven years. He produced new products, such as truffle butters and truffle oils, for clients. He also collaborated on a definitive mushroom cookbook authored by his wife, Amy Farges: The Mushroom Lover’s Mushroom Cookbook and Primer (Workman 2000).
François Baumont spearheaded the growth of a leading pate company, as general manager, for over ten years. He opened their state-of-the art facility in Pennsylvania in 1990. He joined a high profile specialty food distributor in 1997 to contribute his manufacturing and development expertise. He ran the prepared products division, creating many innovative products and winning several awards along the way, until his departure in 2006.


Transatlantic Foods 2008
TFI’s Aux Délices des Bois® Black Truffle Butter won the prestigious sofi GOLD award as the “Outstanding New Food Product of 2008" at the Fancy Food Show in New York. Our White Truffle Butter was close behind.
TFI introduces Pig'Nics in Fall 2008. This line of flavor-rubbed, dry-cured sausages are shaped in unique, olive-sized links.
TFI introduces Artisanal, Spice-Rubbed Bacons in June 2009. Includes Natural - available in retail or layout sizes - plus 3 spiced varieties for retail.
We source wild forest mushrooms and truffles from the global marketplace. Ready-to-Eat Chestnuts come from France. Duck products such as confit and smoked duck breast are produced for us, and we manufacture our truffle butters, olive-sized, flavor-coated, dry-cured sausage, and spice-rubbed bacons local to New York. .
We act as a distributor, broker or an importer, depending on customer preference and volume. Services to wholesale clients include shipping logistics, consolidation service, customs and inspections assistance, and even warehousing for non-perishables. Customized services include private labeling, package design, and foodservice packs.
