A French-American Duo
Transatlantic Foods produces specialty, natural foods under the Aux Délices des Bois brand. Its sofi Award-Winning butters, bacon, and duck fat are innovators in the consumer-driven retail market.
Francois Baumont and Thierry Farges
accumulated a combined 50 years in the specialty food industry before founding
Transatlantic Foods in 2006. They led the American food revolution in the
mushroom, truffle, and prepared meats categories. The partners bring a French sensibility to
their 100% American products.
-Thierry Farges is a pioneer in wild
mushrooms and truffle industry. In the
‘80s he founded Aux Délices des Bois in Tribeca. The first and largest mushroom
importer/distributor for many years, Aux Délices served distributors,
foodservice, and high-end restaurants.
Thierry took another step forward, to develop a highly successful mushroom
division for a specialty meat company. He
collaborated on a definitive mushroom cookbook authored by his wife Amy Farges:
The Mushroom Lover’s Mushroom Cookbook and Primer (Workman 2000).
-François Baumont spearheaded the growth of several of America’s leading pate companies, as general manager in product development. Developing new products such as pates, sausages, and prepared meats, Francois became fluent in best industry practices. He opened a state-of-the art facility and specialized in pork, lamb, and beef products. He handled compliance with federal food safety and labeling regulations and innovated Best Industry Practices. His products won many awards and added millions to the company’s sales.
Grilling Butters by Steven Raichlen, in cooperation with Aux Délices des Bois. A summery, easy, grilling condiment for all you barbecue experts. A selection of four butters includes our White and Black Truffle Butters, our Fines Herbes Butter jazzed up with tarragon and Meyer Lemon, and a new Barbecue Butter created just for us. Brightly colored, log-shaped rolls of butter make for easy slicing - just cut a disk from package right onto your steak or fish.
Aux Délices des Bois® Black Truffle Butter won the prestigious sofi GOLD award as the “Outstanding New Food Product of 2008" by the National Association of the Specialty Food Trade.
White Truffle Butter scored close to perfect, 2008.
Fines Herbes Butter received a perfect sofi score, 2010.
